UNITE HERE Local 610, better known as La Gastronómica, was founded in Puerto Rico in 1958 by its first president, Álvaro González. For more than 60 years the Union has represented thousands of workers in the hotel, gaming and restaurant industry on the island.

In hotels, the membership of our union is wall-to-wall (i.e., in all hotel departments), including: housekeeping, public space, dining room, banquet, room service, kitchen, stewarding, bar, mini-bar, audio-visual, front desk, reservations, PBX, bell and door services, concierge, night auditing, laundry, valet, pool attendants, engineering, maintenance, electrical, carpentry, painting, upholstery, business centers, night cleaning, purchasing and receiving, storeroom, among others. In casinos, we represent cage cashiers, slot attendants, table games dealers, among others.

Since its founding, La Gastronómica keeps a close relationship with other unions in the United States with which it collaborates to continue providing the best standards to its membership. It is also part of UNITE HERE International Union, a union that represents hundreds of thousands of workers in the United States and Canada. Currently, La Gastronómica represents more than 1,000 workers distributed in several hotels and casinos in Puerto Rico.

The greatest tool that La Gatronómica has to achieve its objective of improving the working conditions of the workers it represents is their own organization and their active militancy to obtain a collective agreement. Local 610 strives to continue to grow in order to achieve better labor rights and working conditions in the tourism industry in Puerto Rico.
